I stumbled upon two incredible recipes that do just that, and I'm beyond excited to share them with you. Both recipes are vegan, creamy, and absolutely delicious.
Creamy Indian Style Pasta
This creamy vegan pasta has all the right Indian flavors, including garam masala, turmeric, garlic, and ginger. To make this dish, start by cooking 8 ounces of pasta according to the package instructions. While the pasta cooks, add 1 tablespoon of olive oil to a pan and cook one diced onion until translucent. Add in 2 minced cloves of garlic and cook for another minute. Stir in 1 tablespoon of garam masala, 1 teaspoon of turmeric, and 1/2 teaspoon of ground ginger. Cook for a few minutes until fragrant.
Next, add 1 can of coconut milk and 1/4 cup of nutritional yeast to the pan. Stir everything together and let it simmer for a few minutes until thickened. Finally, add in your cooked pasta and toss everything together. Serve with chopped cilantro on top, and enjoy!

Cook until the onion is translucent, stirring often.
Add in 2 tablespoons of curry powder, 1/2 teaspoon of cumin, 1/2 teaspoon of ground coriander, and 1/4 teaspoon of cayenne pepper. Stir everything together and cook for a minute until fragrant. Pour in 1 cup of vegetable broth, 1 can of crushed tomatoes, and 1 can of chickpeas (drained and rinsed). Mix everything together and let it simmer for 10 minutes.
Add in your cooked pasta and toss everything together. Finally, stir in 1/4 cup of coconut milk and cook for another 2-3 minutes until everything is heated through. Serve with chopped cilantro on top, and enjoy your Indian style curry pasta!
